Easy Fresh Guacamole

Makes about one and a half cups
3 large, ripe organic avocados, peeled, pit removed and reserved
1 large, ripe organic tomato, diced fine
½ small organic red onion, diced fine
½ small jalapeno, seeds and ribs removed, diced fine (optional)
1 clove organic garlic, peeled, smashed and minced
½ organic lime, juiced
Large handful organic cilantro, leaves only, chopped
Unrefined sea salt
Freshly ground pepper
Pinch of cumin and chili powder
In a large glass bowl, smash avocado halves until chunky. Add tomato, onion, garlic, optional jalapeno and mix. Add lime juice. Season with salt and pepper to taste. Add pinch of cumin and chili powder. Mix in cilantro and serve immediately. If not serving right away, refrigerate tightly covered with pit sitting in guacamole.
Time saving tip:
Mix in 2 TBL of your favorite fresh, organic salsa and omit the tomato, onion, garlic and jalapeno.
