Grain Free, Gluten-Free Cinnamon Apple Pancakes


These are so delicious- moist, flavorful and packed with nutrient-dense goodness. Adjust the maple syrup to your taste- these will be a medium sweetness as written, and great on their own without any toppings.

Grain Free Cinnamon Apple Pancakes

For pancakes:
About ½ cup cinnamon apples (prepared from this recipe)
5 pastured eggs
½ cup coconut milk or raw milk from grassfed cows
1 1/2 TBL maple syrup (Grade B preferred)
1 ½ cups blanched almond flour
1 tsp baking soda
1 tsp cinnamon
½ tsp nutmeg (optional)
1 TBL vanilla extract
Dash unrefined sea salt

To cook:
Ghee or coconut oil for cooking, as much as is needed

To serve:
Butter from grassfed cows if desired
Maple syrup if desired
Additional cinnamon apples if desired
Homemade whipped cream (dairy or coconut cream) as you’d like

Directions:
First, prepare cinnamon apples and let cool slightly (if you are not using leftovers) Then proceed with the pancake recipe.

Mix all pancake ingredients in blender or food processor. (The cinnamon apples, eggs, milk, maple syrup, almond flour, soda, cinnamon, nutmeg (if using), vanilla and salt)

In a large pan (not non-stick), melt ghee or coconut oil (or other healthy fat) and ladle desired amount into pan (can make silver dollar size or regular size pancakes). When bubbles appear, they are ready to flip.

Serve hot with desired toppings, or they are great on their own! These also freeze easily and reheat well in the oven.
